Had a wonderful time and have walked the Camino every year since.

There is the Camino Inglés, http://www.csj.org.uk/route-camino-ingles.htm, and many English pilgrims arrive in A Coruña or Santander and begin there. I don’t know if anyone has ever started in Ireland but maybe you could be the first? You’d likely be walking on roads or existing hiking trails. Pilgrim-specific accommodation wouldn’t be available until Spain so you’d have to either camp or stay in general Irish lodging.
